Ingredients (serves 4–6):
- 4 chicken breasts, cubed
- 1.5–2 lbs broccoli, chopped
- 2–3 strips turkey bacon (lower points option)
- 1 cup light Alfredo sauce (or WW-friendly alfredo)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- Salt & pepper, to taste
- ½ cup part-skim mozzarella cheese
Instructions:
- Preheat oven to 350°F (175°C).
- Cook the turkey bacon until crispy; chop into small pieces.
- Lightly steam or sauté chicken and broccoli until almost cooked. Season with garlic, onion powder, paprika, salt, and pepper.
- In a bowl, mix chicken, broccoli, turkey bacon, and Alfredo sauce. Pour into a 9×13 baking dish.
- Sprinkle mozzarella on top. Bake for 15–20 minutes, until cheese is melted and bubbly.
- Optional: Drizzle a small amount of enchilada or Buffalo sauce on top before serving for extra flavor.
WW Points: ~5–6 points per serving (depending on exact sauce and cheese used)
