- 1 ½ cups reduced-fat shredded mozzarella cheese – 16 pts total
- 1 cup fresh spinach, chopped – 0 pts
- Cooking spray – 0 pts
Instructions:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Place ¼ cup mozzarella in a circle on the parchment (repeat for all tacos).
- Sprinkle spinach evenly over cheese circles.
- Bake 6–8 minutes until cheese is melted and edges are golden.
- Let cool 1–2 minutes, then fold over a spoon handle (or similar) to shape into taco shells.
