Cheesy Spinach Tacos (WW Friendly)

Ingredients (Makes 5 tacos):

  • 1 ½ cups reduced-fat shredded mozzarella cheese – 16 pts total
  • 1 cup fresh spinach, chopped – 0 pts
  • Cooking spray – 0 pts

Instructions:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place ¼ cup mozzarella in a circle on the parchment (repeat for all tacos).
  3. Sprinkle spinach evenly over cheese circles.
  4. Bake 6–8 minutes until cheese is melted and edges are golden.
  5. Let cool 1–2 minutes, then fold over a spoon handle (or similar) to shape into taco shells.

  • Per Taco: 3 points (with 1 point left over to spread across if needed)
