Cheesy Ranch Bacon Biscuits (WW Friendly)

Ingredients

  • 4 oz reduced-fat cream cheese
  • 2 cups part-skim mozzarella cheese
  • 2 tsp baking powder
  • 3 large eggs
  • 1 packet ranch seasoning mix
  • 1 1/2 cups superfine almond flour
  • 1 cup reduced-fat cheddar cheese
  • 1/2 cup turkey bacon, cooked and chopped

Optional Topping

  • Light butter spray
  • Dried parsley
  • Extra cheddar cheese

Instructions

1. Preheat the Oven

Preheat oven to 400°F (205°C).

Lightly spray a baking dish or cast iron skillet with cooking spray.


2. Melt the Cheese Base

In a microwave-safe bowl combine:

  • cream cheese
  • mozzarella cheese

Microwave for about 1 minute until melted.

Stir until smooth.


3. Make the Dough

Mix into the cheese mixture:

  • baking powder
  • eggs
  • ranch seasoning
  • almond flour

Stir until fully combined.

Fold in:

  • cheddar cheese
  • chopped turkey bacon

The dough will be thick and cheesy.


4. Shape the Biscuits

Scoop dough into about 11–12 biscuit balls.

Place evenly into the baking dish like the photo.

Refrigerate for about 10 minutes so they hold their shape better while baking.


5. Bake

Bake for 20–25 minutes until:

  • golden brown
  • puffed up
  • cheesy on top

Optional: Spray lightly with butter spray and sprinkle parsley over the top after baking.

Serve warm.
