For the Beef Filling:
- 1/2 lb 96% lean ground beef – 6 points total
- 1/2 tsp garlic powder – 0 points
- 1/2 tsp onion powder – 0 points
- 1/2 tsp dried oregano – 0 points
- 1/2 tsp paprika – 0 points
- Salt & pepper – to taste
- 1/4 cup no-sugar-added marinara or pizza sauce – 1 point
For the Tacos:
- 6 low-carb tortillas (like Ole Xtreme Wellness or Mission Carb Balance) – 1 point each
- 1 1/2 cups reduced-fat mozzarella cheese – 9 points total
- 18 slices turkey pepperoni (3 per taco) – 4 points total
- 1/2 cup no-sugar-added pizza sauce – 2 points total
- Olive oil spray or light butter – 1–2 points total
Optional toppings (0–1 point total):
Fresh basil, red pepper flakes, or a sprinkle of grated Parmesan
🔪 Instructions:
1. Cook the Beef:
In a skillet over medium heat, cook the ground beef until browned.
Drain any excess fat. Stir in all the spices and 1/4 cup of sauce. Simmer for 2 minutes. Set aside.
2. Build the Tacos:
Spread a small amount of sauce on each tortilla.
Add a scoop of the beef mixture, a sprinkle of reduced-fat mozzarella, and 3 slices of turkey pepperoni.
3. Crisp the Tacos:
Fold each tortilla in half.
Spray a skillet or griddle with olive oil spray or brush with light butter.
Cook each taco for 2–3 minutes per side, until golden brown and melty.
4. Garnish & Serve:
Top with fresh basil, chili flakes, or Parmesan if you’d like.
