A creamy, cozy side dish that’s big on flavor but lighter on points! Sweet corn, smoky turkey bacon, and melty reduced-fat cheddar come together in a comfort food classic you’ll love.

Ingredients (8 servings):

  • Frozen corn kernels – 4 cups (0 points)
  • Reduced-fat shredded cheddar cheese – 1 cup (8 points)
  • Turkey bacon, cooked & crumbled – 6 slices (3 points)
  • Fat-free half & half – 1/2 cup (1 point)
  • Light butter – 2 tbsp (3 points)
  • Garlic powder – 1/4 tsp (0 points)
  • Paprika – 1/4 tsp (0 points)
  • Salt & pepper – to taste (0 points)
  • Fresh parsley (optional) – 2 tbsp (0 points)

Instructions:

  1. Cook turkey bacon until crisp, then crumble.
  2. In a slow cooker, combine corn, cheese, bacon, half & half, light butter, garlic powder, and paprika. Mix well.
  3. Season with salt & pepper. Stir to incorporate.
  4. Cover and cook on low for 4 hours or high for 2 hours, stirring occasionally.
  5. Taste and adjust seasoning. Garnish with parsley before serving.
