Fluffy, apple-packed, and sweet without blowing your points—perfect for breakfast or a snack!

Ingredients (makes ~8 fritters)

Fritters:

  • 1 ½ cups whole wheat flour – 0 Points
  • 2 Tbsp sugar or sugar substitute – 0–1 Point
  • 2 tsp baking powder – 0 Points
  • ½ tsp salt – 0 Points
  • 1 ½ tsp cinnamon – 0 Points
  • ⅓ cup unsweetened almond milk – 0 Points
  • 2 large egg whites – 0 Points
  • 3 Tbsp unsweetened applesauce – 0 Points
  • 2 large Granny Smith or Honey Crisp apples, peeled, cored, diced – 0 Points
  • Nonstick cooking spray or 1 tsp oil per fritter (~8 tsp total) – 1 Point per fritter

Glaze (Optional, very light):

  • ¼ cup powdered sugar or sugar substitute – 2 Points total
  • 2–3 tsp skim milk – 0 Points
  • ½ tsp vanilla extract – 0 Points

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment.
  2. Whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. Make a well in the center, add almond milk, egg whites, and applesauce. Stir just until combined.
  4. Fold in diced apples.
  5. Scoop batter (~¼ cup) onto baking sheet. Spray lightly with nonstick spray.
  6. Bake 12–15 min until golden and cooked through.

Glaze (optional):

  1. Mix powdered sugar, milk, and vanilla.
  2. Drizzle lightly over cooled fritters.
