Apple Fritter Bites (Lower Points Version)

Ingredients:

  • 1 cup whole wheat flour (or a mix of whole wheat + all-purpose)
  • 1 tsp baking powder
  • ยผ tsp salt
  • ยผ cup granulated erythritol or other zero-calorie sweetener
  • 2 large egg whites (instead of whole eggs)
  • ยฝ cup unsweetened almond milk (instead of regular milk)
  • 1 tsp vanilla extract
  • 2 cups diced apples (peeled and cored)
  • 1 tsp ground cinnamon
  • Cooking spray or just enough oil for shallow frying (use less oil)
  • Powdered erythritol or cinnamon for dusting (instead of confectionersโ€™ sugar)

Instructions:

  1. In a bowl, mix flour, baking powder, salt, and sweetener.
  2. In another bowl, whisk egg whites, almond milk, and vanilla extract.
  3. Combine wet and dry ingredients until smooth.
  4. Fold in diced apples and cinnamon.
  5. Heat a non-stick skillet with minimal oil or use cooking spray.
  6. Drop small spoonfuls of batter and cook over medium heat, turning after 2โ€“3 minutes until golden and cooked through.
  7. Dust with powdered erythritol or cinnamon instead of sugar.
  8. Serve warm.
