Ingredients

For the Onion Fritters:

  • 2 large sweet onions, thinly sliced – 0 points
  • ½ cup white whole wheat flour – 6 points
  • ½ cup self-rising flour (or all-purpose with ½ tsp baking powder added) – 6 points
  • 1 tsp baking powder – 0 points
  • 1 tsp salt – 0 points
  • ½ tsp black pepper – 0 points
  • 1 tsp garlic powder – 0 points
  • ½ tsp smoked paprika (optional) – 0 points
  • 1 large egg – 2 points
  • ½ cup unsweetened almond milk – 0 points
  • Cooking spray (instead of deep-frying) – 0 points

For the Chive Dip:

  • ½ cup nonfat plain Greek yogurt – 0 points
  • 2 tbsp light sour cream – 2 points
  • 1 tbsp light mayonnaise – 1 point
  • 2 tbsp fresh chives, finely chopped – 0 points
  • 1 tbsp lemon juice – 0 points
  • ½ tsp garlic powder – 0 points
  • Salt & pepper – 0 points

Instructions

  1. Make Chive Dip: In a bowl, mix Greek yogurt, light sour cream, mayo, chives, lemon juice, garlic powder, salt, and pepper until smooth. Chill in fridge.
  2. Make Fritter Batter: In a bowl, whisk flours, baking powder, salt, pepper, garlic powder, and paprika. In another bowl, whisk egg and almond milk. Combine wet and dry ingredients into a smooth batter. Add sliced onions and coat well.
  3. Cook: Heat a large skillet or air fryer. Spray lightly with cooking spray. Drop spoonfuls of onion batter, flatten gently, and cook 3–4 minutes per side until golden and crispy. (For air fryer: 375°F for 8–10 minutes, flipping halfway.)
  4. Serve: Enjoy fritters hot with chilled chive dip.
