Almond Cream Pastries (WW-Friendly Version)

Ingredients (Makes 6 pastries):

  • 1 cup almond flour – 12 points total (2 per pastry)
  • ¼ cup coconut flour – 3 points total (0.5 per pastry)
  • ¼ cup unsweetened applesauce (instead of ½ cup butter) – 0 points
  • 1 large egg – 0 points
  • 2 Tbsp erythritol (or monk fruit sweetener) – 0 points
  • ½ tsp vanilla extract – 0 points
  • Pinch of salt – 0 points
  • 3 Tbsp powdered peanut butter (PB2) mixed with water for filling – 3 points total (0.5 per pastry)

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Mix dry ingredients: almond flour, coconut flour, sweetener, and salt.
  3. Add wet: stir in applesauce, egg, and vanilla until dough comes together.
  4. Shape 6 small discs, fill each with a spoon of PB2 cream, and fold edges slightly.
  5. Bake 15–18 minutes until lightly golden.
  6. Cool before serving.
