Air-Fried Carrot “Bacon” (WW Low-Point Version)

Ingredients (WW Adapted)

  • 1 tbsp sugar-free maple syrup – 0 pts
  • 2 tbsp low-sodium soy sauce – 0 pts
  • ¼ tsp smoked paprika – 0 pts
  • ¼ tsp garlic powder – 0 pts
  • ¼ tsp onion powder – 0 pts
  • ¼ tsp black pepper – 0 pts
  • 2 medium carrots, shaved into thin ribbons – 0 pts
  • Cooking spray – 0 pts

Instructions

  1. Mix the sugar-free maple syrup, soy sauce, and spices in a small bowl.
  2. Slice the carrots into long, thin strips using a mandolin or vegetable peeler.
  3. Add the carrot strips to a container and pour the marinade over them. Let sit for 15 minutes.
  4. Preheat the air fryer to 380°F. Spray the basket lightly with cooking spray.
  5. Place the strips in a single layer and air fry for 3 minutes.
  6. Flip and cook for another 2 minutes, or until crispy and browned.
  7. Repeat until all strips are cooked.
