WW-Friendly 2-Point Banana Frosty

Ingredients

  • ½ large banana, sliced and frozen
  • ½ cup nonfat plain Greek yogurt
  • ¾ cup unsweetened almond milk
  • 1 tbsp sugar-free vanilla instant pudding mix
  • 1–2 tbsp zero-calorie sweetener, to taste
  • ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 1½ cups ice
  • Tiny pinch of salt
  • Optional: ⅛–¼ tsp xanthan gum for an extra-thick Frosty texture

Instructions

  1. Add the frozen banana, Greek yogurt, almond milk, pudding mix, sweetener, vanilla, cinnamon, and salt to a high-speed blender.
  2. Add about 1 cup of ice and blend until completely smooth.
  3. Add the remaining ice a little at a time and keep blending until the mixture becomes thick and creamy.
  4. If you want it almost spoon-thick, add the xanthan gum during the last 20 seconds of blending.
  5. If it becomes too thick for your blender, add almond milk 1 tablespoon at a time. Try not to add too much or you’ll lose that Frosty texture.
  6. Pour into a large glass and serve immediately.

I’ve made this a few times now and the biggest thing for me is using a banana that’s completely frozen instead of just cold. It makes the texture so much thicker and creamier. I also start with less almond milk than I think I’ll need and only add more if the blender absolutely needs it — that’s how I keep it thick enough that it almost feels like soft serve.
