Berry filling
- 1 cup fat-free Greek yogurt — 0 Points
- ½ cup fat-free cottage cheese, blended smooth — 0 Points
- ½ cup blueberries — 0 Points
- ½ cup chopped strawberries — 0 Points
- 2 tbsp zero-calorie sweetener — 0 Points
- ½ tsp vanilla extract — 0 Points
- 1 tsp lemon juice — 0 Points
- 1 tbsp sugar-free cheesecake pudding mix — about 1 Point
Chocolate shell
- ¼ cup sugar-free dark chocolate chips — about 6 Points
- 1–2 tsp unsweetened almond milk, only if needed for melting
Instructions
- Blend the cottage cheese until completely smooth.
- Mix it with the Greek yogurt, sweetener, vanilla, lemon juice and pudding mix.
- Gently crush some of the blueberries and strawberries into the cream so it turns pink-purple, but leave plenty of larger berry pieces intact like in the photo.
- Spoon the mixture into 4 large thick clusters on a parchment-lined tray.
- Freeze for 2–3 hours, until completely firm.
- Melt the sugar-free chocolate slowly in the microwave in 15-second intervals.
- Dip or spoon the chocolate over each frozen cluster, covering the top, bottom and sides.
- Return to the freezer for about 10–15 minutes until the chocolate shell is firm.
- Let one sit out for 3–5 minutes before eating so the center becomes creamy while the chocolate stays crisp.
