Blueberry Poppy Seed Cheesecake Crepes

These are thin, soft crepes filled with a fluffy cheesecake-style cream and juicy blueberries, with little poppy seeds throughout the batter so they stay really close to the look in the photo. 💛

Ingredients

For the crepes

  • 2 large eggs — 0 Points
  • ½ cup liquid egg whites — 0 Points
  • ½ cup unsweetened almond milk — 0 Points
  • 2 tbsp all-purpose flour — 2 Points
  • 1 tbsp cornstarch — 1 Point
  • 1 tbsp poppy seeds — 1 Point
  • 1 tbsp zero-calorie sweetener — 0 Points
  • ½ tsp vanilla extract — 0 Points
  • Pinch of salt
  • Cooking spray — 0 Points

For the creamy filling

  • 1 cup fat-free Greek yogurt — 0 Points
  • ½ cup fat-free cottage cheese, blended smooth — 0 Points
  • 1 tbsp sugar-free cheesecake or vanilla pudding mix — about 1 Point
  • 1–2 tbsp zero-calorie sweetener
  • ½ tsp vanilla extract
  • 1 tsp lemon juice

For the blueberries

  • 1 cup fresh or frozen blueberries — 0 Points
  • 1 tbsp zero-calorie sweetener
  • 1 tsp lemon juice

Instructions

  1. Whisk the eggs, egg whites, almond milk, flour, cornstarch, sweetener, vanilla and salt until completely smooth.
  2. Stir in the poppy seeds.
  3. Heat a nonstick skillet over medium-low heat and lightly mist with cooking spray.
  4. Pour in a thin layer of batter and swirl the pan immediately. Cook for about 60–90 seconds, flip carefully, and cook another 20–30 seconds.
  5. Repeat until you have about 6 large thin crepes.
  6. Blend the cottage cheese until silky, then mix with Greek yogurt, pudding mix, sweetener, vanilla and lemon juice.
  7. Warm the blueberries with sweetener and lemon juice for 2–3 minutes, just until some of them release their juices. Let cool.
  8. Spread each crepe with the cheesecake filling, spoon blueberries down the center, then fold into rectangles like the ones pictured.
  9. Chill for 15–20 minutes if you want the filling extra thick.
