This is the kind of banana bread I love — dark golden outside, soft and moist inside, and actually tastes like banana bread, not “diet bread.” 😍 Using ripe bananas, Greek yogurt, and applesauce keeps that classic texture while cutting way down on the butter and sugar.

Ingredients
- 3 very ripe medium bananas, mashed
- 1 cup self-rising flour
- ½ cup plain nonfat Greek yogurt
- ⅓ cup unsweetened applesauce
- 2 large eggs
- ⅓ cup zero-calorie granulated sweetener
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- ¼ tsp nutmeg, optional
- 2 tbsp chopped walnuts, optional
- Cooking spray
Instructions
- Preheat oven to 350°F (175°C). Line an 8×4 or 9×5-inch loaf pan with parchment paper and lightly spray with cooking spray.
- Mash the bananas until mostly smooth, leaving a few tiny pieces for moisture and texture.
- Whisk in the eggs, Greek yogurt, applesauce, sweetener and vanilla.
- Add the flour, baking soda, cinnamon, salt and nutmeg.
- Gently fold everything together just until combined. Don’t overmix.
- Fold in the walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, until deeply golden and a toothpick inserted into the center comes out mostly clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a rack.
- Let it cool before slicing into 12 thick slices.
