Ultra Low-Point Version
Creamy pumpkin pie filling, warm fall spices, crunchy graham cracker crumbs, and a big cloud of whipped topping—all packed into one little jar. This is one of those desserts that tastes much more indulgent than it actually is. No oven, no complicated steps, and perfect for making ahead when that pumpkin pie craving hits.

Ingredients
Pumpkin Filling
- 1 can (15 oz) pure pumpkin purée
- 1½ cups plain nonfat Greek yogurt
- 1 package (1 oz) sugar-free cheesecake or vanilla instant pudding mix
- ½ cup unsweetened almond milk
- 2–3 tablespoons zero-calorie sweetener, to taste
- 1 teaspoon vanilla extract
- 1½ teaspoons pumpkin pie spice
- ½ teaspoon cinnamon
- Pinch of salt
Graham Crumble
- 4 sheets reduced-fat graham crackers, finely crushed
- ½ teaspoon cinnamon
- 1 tablespoon sugar-free maple syrup
Topping
- 1½ cups fat-free or light whipped topping
- Extra graham cracker crumbs
- Sprinkle of cinnamon or pumpkin pie spice
Instructions
- Add the pumpkin purée, Greek yogurt, pudding mix, almond milk, sweetener, vanilla, pumpkin pie spice, cinnamon, and salt to a large bowl.
- Whisk for 2–3 minutes until completely smooth, thick, and creamy.
- Combine the crushed graham crackers, cinnamon, and sugar-free maple syrup in a small bowl. Mix until crumbly.
- Divide most of the graham crumble between 6 small jars, pressing it lightly into the bottoms.
- Spoon the pumpkin mixture evenly into each jar.
- Refrigerate for at least 1 hour so the filling becomes thick and pie-like.
- Just before serving, add a generous swirl of whipped topping.
- Finish with the remaining graham crumble and a little cinnamon.
Tip
Save some of those graham crumbs for the very top. That little bit of crunch against the creamy pumpkin filling makes a huge difference!
