Ingredients
- 1 refrigerated reduced-fat pie crust
OR - crustless for lower points
- 1 1/2 cups lean diced ham or turkey ham
- 1 cup reduced-fat Swiss cheese
- 4 large eggs
- 1 cup unsweetened almond milk or low-fat milk
- 1/2 cup blended low-fat cottage cheese or nonfat Greek yogurt
- 1 tsp Dijon mustard optional
- 1 tsp garlic powder
- Salt and black pepper
- Pinch of nutmeg
- Fresh thyme or parsley
Instructions
1. Prepare the Crust
Preheat oven to 375°F (190°C).
Place pie crust into a 9-inch pie dish and press gently into place.
For a lower-point version you can skip the crust completely.
2. Add the Filling
Spread diced ham evenly into the crust.
Top with most of the Swiss cheese, saving a little for the top.
3. Make the Egg Mixture
In a bowl whisk together:
- eggs
- almond milk
- cottage cheese or Greek yogurt
- Dijon mustard
- garlic powder
- salt
- pepper
- nutmeg
Mix until smooth and creamy.
4. Assemble
Pour egg mixture over the ham and cheese.
Top with remaining Swiss cheese.
5. Bake
Bake for about 35–45 minutes until:
- golden brown
- puffed up
- center fully set
Cool for about 10 minutes before slicing.
Top with fresh thyme or parsley.
