Ham & Swiss Breakfast Quiche (WW Friendly)

Ingredients

  • 1 refrigerated reduced-fat pie crust
    OR
  • crustless for lower points
  • 1 1/2 cups lean diced ham or turkey ham
  • 1 cup reduced-fat Swiss cheese
  • 4 large eggs
  • 1 cup unsweetened almond milk or low-fat milk
  • 1/2 cup blended low-fat cottage cheese or nonfat Greek yogurt
  • 1 tsp Dijon mustard optional
  • 1 tsp garlic powder
  • Salt and black pepper
  • Pinch of nutmeg
  • Fresh thyme or parsley

Instructions

1. Prepare the Crust

Preheat oven to 375°F (190°C).

Place pie crust into a 9-inch pie dish and press gently into place.

For a lower-point version you can skip the crust completely.


2. Add the Filling

Spread diced ham evenly into the crust.

Top with most of the Swiss cheese, saving a little for the top.


3. Make the Egg Mixture

In a bowl whisk together:

  • eggs
  • almond milk
  • cottage cheese or Greek yogurt
  • Dijon mustard
  • garlic powder
  • salt
  • pepper
  • nutmeg

Mix until smooth and creamy.


4. Assemble

Pour egg mixture over the ham and cheese.

Top with remaining Swiss cheese.


5. Bake

Bake for about 35–45 minutes until:

  • golden brown
  • puffed up
  • center fully set

Cool for about 10 minutes before slicing.

Top with fresh thyme or parsley.
