Ingredients
- 6 boneless skinless chicken thighs or chicken breasts
- 2 cups mushrooms, sliced
- 3 garlic cloves, minced
- 1 small onion, diced
- Cooking spray
Seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and black pepper
- Italian seasoning
Creamy Sauce
- 1 can reduced-fat cream of mushroom soup
- 1/2 cup nonfat Greek yogurt
- 1/2 cup unsweetened almond milk
- 1/2 cup reduced-fat mozzarella cheese
- 2 tbsp parmesan cheese
- 1 tsp chicken bouillon powder
Instructions
1. Season the Chicken
Pat chicken dry.
Season with:
- garlic powder
- onion powder
- paprika
- salt
- pepper
- Italian seasoning
2. Sear the Chicken
Heat a skillet over medium-high heat.
Spray lightly with cooking spray.
Sear chicken for about 3–4 minutes per side until golden brown.
The chicken does not need to cook fully yet.
Transfer to a baking dish.
3. Cook the Mushrooms
In the same skillet cook:
- mushrooms
- onion
- garlic
Cook until softened and lightly golden.
4. Make the Sauce
Lower heat and stir in:
- cream of mushroom soup
- Greek yogurt
- almond milk
- mozzarella
- parmesan
- bouillon powder
Mix until creamy and smooth.
5. Bake
Pour mushroom sauce over the chicken.
Bake at 375°F (190°C) for about 25–30 minutes until:
- chicken is fully cooked
- sauce is bubbling
- top is lightly golden
Let rest a few minutes before serving.
