This looks like one of those giant ice cream shop bowls that somehow costs twelve dollars and disappears in five minutes 😭
Creamy chocolate ice cream…
Chunks of cookies mixed everywhere…
Cold fluffy texture…
Big swirls of creamy goodness with crunchy cookie pieces all through it.
And somehow this version keeps the points super low while still looking thick, rich, and completely loaded like the photo.
Honestly the hardest part is waiting for it to freeze 😄

- 1 package sugar-free chocolate pudding mix
- 1/2 cup unsweetened almond milk
- 2 tbsp light whipped topping
- 1 tsp vanilla extract
- Sweetener to taste
Mix-Ins
- 4 Oreo Thins or sugar-free sandwich cookies, crushed

Instructions
1. Make the Ice Cream Base
In a large bowl mix:
- Greek yogurt

- pudding mix
- almond milk
- whipped topping
- vanilla
- sweetener
Whisk until smooth and creamy.
The texture should become thick like soft serve.

You want visible cookie chunks throughout like the photo.
3. Freeze
Transfer mixture into a freezer-safe container.
Freeze for about 2–3 hours.
Stir once halfway through for a creamier texture.
4. Serve
Scoop into bowls.
Top with:

- 1–3 WW points
Depending on cookies and protein powder used.
Low-Point Tips
- Greek yogurt creates a thick creamy texture without heavy cream.
- Sugar-free pudding mix helps the ice cream stay soft and scoopable.
- Oreo Thins give the cookies-and-cream look while using fewer points.
- Protein powder makes it more filling and dessert-like.
- Light whipped topping helps mimic real ice cream texture without extra fat.
