🧺 Ingredients
- 1 yellow onion, chopped
- Kosher salt, to taste
- 1 lb lean ground turkey sausage (or 93% lean ground beef*)
- 4 garlic cloves, minced
- 1 (28 oz) can crushed tomatoes
- 1 tbsp dried oregano
- 5 cups low-sodium chicken broth
- 8 oz lasagna noodles, broken into 2-inch pieces
- 2 cups fat-free shredded mozzarella
Optional Toppings
- Grated Parmesan
- Fresh basil
*Points will be higher with beef.
👩🍳 Instructions
1️⃣ Spray a large pot or deep skillet with cooking spray. Add onion and a pinch of salt. Cook over medium heat until soft and lightly golden (about 5 minutes).
2️⃣ Add turkey sausage. Cook until browned and fully cooked, breaking it up as it cooks. Drain excess fat if needed.
3️⃣ Stir in garlic and cook 1 minute until fragrant.
4️⃣ Add crushed tomatoes and oregano. Stir well.
5️⃣ Pour in chicken broth and bring to a simmer.
6️⃣ Add broken lasagna noodles. Cook about 10 minutes, stirring occasionally, until noodles are tender.
7️⃣ Stir in mozzarella and let it melt into the soup to make it creamy and cheesy.
Serve hot with Parmesan and fresh basil if desired.
