Ingredients (Low-Point Optimized)
- 1½ lbs 96% lean ground beef (instead of 2.25 lbs regular)
- 4 oz light Velveeta (just enough for the classic flavor)
- 4 oz light cream cheese
- 1 can fat-free cream of chicken soup
- 1 can Rotel tomatoes with chilies
- 8 oz dry bowtie pasta (half a box)
- 1 cup pasta water (as needed)
Instructions
1️⃣ Brown ground beef and drain.
2️⃣ Add beef, Velveeta, cream cheese, soup, and Rotel to crockpot. Cook on high ~1½ hours.
3️⃣ Boil pasta separately.
4️⃣ Stir pasta into crockpot mixture, adding a little pasta water to loosen sauce.
