🧺 Ingredients
- 2 cups blueberries (fresh or frozen)
- 1 tbsp lemon juice
- 1 tbsp monkfruit or stevia sweetener
- 1 box sugar-free yellow cake mix
- 1 can diet lemon-lime soda (Sprite Zero / 7-Up Zero)
- Optional: cinnamon
👩🍳 Instructions
- Preheat oven to 350°F (175°C).
- Lightly spray a 12-cup muffin tin.
- Toss blueberries with lemon juice and sweetener.
- Divide blueberry mixture evenly into muffin cups.
- Sprinkle dry cake mix over each cup (about 2 tbsp each).
- Slowly drizzle soda over each one — just enough to moisten the mix (not soupy).
- Optional: sprinkle a little cinnamon on top.
- Bake 15–20 minutes until tops are lightly golden and set.
- Let cool slightly — they firm up as they sit.
