Ingredients (Low-Point Optimized)
- 1½ lbs skinless chicken breast or trimmed thighs, cubed
- Olive oil spray (instead of 2 tbsp oil)
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 medium potato, cubed (reduced from 2)
- 1 cup green beans, chopped
- 4 cups fat-free chicken broth
- 1 can diced tomatoes
- 2 tsp Italian seasoning
- 1 tsp smoked paprika
- 1 bay leaf
- Salt & pepper
- 1 cup frozen peas (optional)
Instructions
1️⃣ Spray pot and brown chicken. Remove and set aside.
2️⃣ Add onion, garlic, carrots, celery; sauté.
3️⃣ Return chicken, add potatoes, beans, broth, tomatoes, seasonings, bay leaf.
4️⃣ Simmer covered 25–30 min.
5️⃣ Add peas last 5 min. Remove bay leaf.
