Ingredients (Low-Point Optimized)

  • 1½ lbs skinless chicken breast or trimmed thighs, cubed
  • Olive oil spray (instead of 2 tbsp oil)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium potato, cubed (reduced from 2)
  • 1 cup green beans, chopped
  • 4 cups fat-free chicken broth
  • 1 can diced tomatoes
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt & pepper
  • 1 cup frozen peas (optional)

Instructions

1️⃣ Spray pot and brown chicken. Remove and set aside.
2️⃣ Add onion, garlic, carrots, celery; sauté.
3️⃣ Return chicken, add potatoes, beans, broth, tomatoes, seasonings, bay leaf.
4️⃣ Simmer covered 25–30 min.
5️⃣ Add peas last 5 min. Remove bay leaf.
