Ingredients (Low-Point Optimized)

  • 2 cups cooked shredded chicken breast
  • 1 can (15 oz) white beans, rinsed & drained
  • 1 can (4 oz) diced green chiles
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 4 cups fat-free chicken broth
  • ½ cup unsweetened almond milk OR fat-free half-and-half
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper

Optional garnish (0 points):

  • cilantro, parsley, lime squeeze

Instructions

1️⃣ Spray pot and sauté onion + celery 3–4 minutes.
2️⃣ Add broth, tomatoes, chiles, beans, chicken, and seasonings.
3️⃣ Simmer 15–20 minutes.
4️⃣ Stir in almond milk/half-and-half. Simmer 5 more minutes.
