- 1 lb pork ribs, trimmed of visible fat, cut into pieces

- 2 apples, chopped (peeled)
- 8 cups water
- 2 slices fresh ginger

Instructions
1️⃣ Blanch ribs
Boil ribs 3–5 minutes, drain, rinse — this removes excess fat and keeps broth clean.
2️⃣ Build the soup
In a pot add ribs, carrots, apples, ginger, salt, and water. Bring to boil.
3️⃣ Simmer gently
Lower heat, cover, and simmer 1–2 hours until ribs are tender and broth is lightly golden.
4️⃣ Skim fat
Spoon off fat from the surface — this is key for keeping points low.
5️⃣ Serve
Garnish with scallions and serve hot.
