Ingredients (Low-Point Optimized)

  • 2 medium sweet potatoes, washed, skin on
  • Olive oil spray (instead of 2 tbsp oil — same crisp look)
    👉 OR 1 tsp olive oil total if you want a richer finish
  • 2 garlic cloves, thinly sliced
  • 1 tbsp chopped parsley (or ½ tsp dried herbs)
  • Salt + black pepper
  • Optional: chili flakes or paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place each potato between chopsticks/spoons and slice thinly without cutting through.
  3. Slide garlic slices into some of the cuts.
  4. Spray potatoes well with olive oil spray (or brush with 1 tsp oil).
  5. Season generously.
  6. Bake 45–55 minutes until soft inside and crispy on the edges.
  7. Halfway through, spray again for extra crispiness.
