Ingredients (Ultra Low-Point Version)

  • 1 Mission Carb Balance tortilla (or similar high-fiber tortilla)
  • 1 tsp olive oil (or olive oil spray — best for lowest points)
  • 2 tbsp Rao’s pizza sauce (thin layer)
  • Italian seasoning
  • ¼ cup fat-free shredded mozzarella (keeps the cheesy look for almost no points)
  • Optional toppings (0-point style):
    • mushrooms, onions, peppers, jalapeños, spinach
    • turkey pepperoni (light amount)

Important for “same pizza look”:
Fat-free mozzarella melts less dramatic than regular cheese, so the trick is:

  • use ¼ cup fat-free mozzarella
    • 1 tbsp part-skim mozzarella on top (optional)
      Still looks like REAL pizza, but points stay low.

Instructions

1) Crisp the tortilla

  1. Heat skillet on medium.
  2. Add olive oil spray or 1 tsp olive oil.
  3. Toast tortilla 1–2 minutes per side until lightly golden.

2) Build the pizza

  1. Move tortilla to baking sheet.
  2. Spread 2 tbsp sauce.
  3. Sprinkle Italian seasoning.
  4. Add mozzarella + toppings.

3) Bake

Bake at 425°F (220°C) for 10–12 minutes until crispy edges and melted cheese.

4) Serve

Slice and eat immediately (this is mandatory 😄).
