Ingredients (Low-Point Swap Version)

  • 2 salmon fillets (4 oz each)
  • Zoodles (zucchini noodles), 3 cups total (about 2 medium zucchini)
  • 1 tbsp capers
  • 2 tbsp lemon juice
  • 1/2 cup low-sodium chicken broth (or veggie broth)
  • 2 tsp olive oil (total) (or olive oil spray to go even lower)
  • 2 cloves garlic, minced
  • Salt + pepper
  • Parsley (optional)
  • Optional (for the true Olive Garden vibe):
    • 1 tbsp grated Parmesan (optional, but worth it)

Instructions

  1. Season salmon with salt + pepper.
  2. Heat 1 tsp olive oil in a pan. Cook salmon 3–4 min per side (depending on thickness). Remove and set aside.
  3. In the same pan, add garlic for 20 seconds.
  4. Add broth + lemon juice + capers and simmer 2–3 minutes to reduce slightly.
  5. Add zoodles + 1 tsp olive oil and toss for 1–2 minutes just until warmed (don’t overcook).
  6. Put salmon back in, spoon sauce over everything. Sprinkle parsley + optional Parmesan.
  7. Serve immediately and pretend you’re at Olive Garden 😄
