Lower-Carb | Lighter Holiday Dessert
Serves: 8
Ingredients:
- 8 oz reduced-fat cream cheese, room temperature
- 1 cup fat-free half & half (or evaporated skim milk — same texture, way lower points)
- 1 box sugar-free white chocolate pudding mix
- 1 store-bought light nut pie crust (pecan or walnut-style)
- Optional topping: fresh berries
Instructions:
- Beat cream cheese until light and fluffy (whisk attachment works great).
- Add pudding mix and beat until fully combined.
- Slowly pour in the fat-free half & half and beat for 4–5 minutes until thick and creamy.
- Pour filling into prepared crust and smooth the top.
- Refrigerate for at least 3–4 hours, or until fully set.
- Slice into 8 pieces and serve chilled.
