Main Ingredients:

  • 16 oz lean beef stew meat – 0 points
  • 2 bell peppers of each color, sliced – 0 points
  • 1 tsp vegetable oil (or cooking spray for 0 points)
  • 3 tbsp Worcestershire sauce – 0 points
  • 1 tsp minced garlic – 0 points
  • 1 can low-sodium beef broth – 0 points
  • 1 can stewed tomatoes (with juice) – 0 points

For Coating & Gravy:

  • 1 tsp seasoned salt – 0 points
  • 1 tbsp whole-wheat or low-point flour – ~1 point
  • Extra pinch of flour to thicken sauce – 0–1 point

Instructions:

  1. Dredge the Beef
    Lightly coat beef stew meat with flour and seasoned salt.
  2. Sear the Beef and Peppers
    Heat minimal oil (or cooking spray) in a skillet over medium heat.
    Add beef, garlic, and bell peppers. Sear until beef gets a nice color.
  3. Load the Slow Cooker
    Transfer seared beef and peppers into a greased or lined slow cooker.
  4. Prepare the Gravy
    In the same skillet, combine stewed tomatoes (with juice) and beef broth.
    Sprinkle a bit of flour slowly while stirring to thicken slightly.
    Pour sauce over beef in the slow cooker.
  5. Cook
    Cover and cook on low for 8 hours, until beef is tender and flavors meld together.
  6. Serve
    Spoon over steamed rice, mashed potatoes, or enjoy on its own. Melt-in-your-mouth beef with flavorful gravy!
