- 16 oz lean beef stew meat – 0 points
- 2 bell peppers of each color, sliced – 0 points
- 1 tsp vegetable oil (or cooking spray for 0 points)
- 3 tbsp Worcestershire sauce – 0 points
- 1 tsp minced garlic – 0 points
- 1 can low-sodium beef broth – 0 points
- 1 can stewed tomatoes (with juice) – 0 points
For Coating & Gravy:
- 1 tsp seasoned salt – 0 points
- 1 tbsp whole-wheat or low-point flour – ~1 point
- Extra pinch of flour to thicken sauce – 0–1 point
Instructions:
- Dredge the Beef
Lightly coat beef stew meat with flour and seasoned salt. - Sear the Beef and Peppers
Heat minimal oil (or cooking spray) in a skillet over medium heat.
Add beef, garlic, and bell peppers. Sear until beef gets a nice color. - Load the Slow Cooker
Transfer seared beef and peppers into a greased or lined slow cooker. - Prepare the Gravy
In the same skillet, combine stewed tomatoes (with juice) and beef broth.
Sprinkle a bit of flour slowly while stirring to thicken slightly.
Pour sauce over beef in the slow cooker. - Cook
Cover and cook on low for 8 hours, until beef is tender and flavors meld together. - Serve
