  • 1 package sugar-free instant vanilla pudding mix
  • 1 cup fat-free milk (or unsweetened almond milk)
  • ยพ cup unsweetened shredded coconut
  • 1 cup light whipped topping (like Cool Whip Light)

Optional (adds points):

  • 2 tbsp chopped macadamia nuts โ†’ +2 points total

Instructions

  1. Whisk pudding mix with milk until thick. Let it sit for 2 minutes.
