Ingredients
Salmon
- 4 skinless salmon fillets (4–5 oz each)
- 1 tbsp light butter
- 1 tsp olive oil
- ½ tsp garlic powder
- ¼ tsp paprika
- Salt & pepper
Creamy Sauce
- 2 tsp light butter
- 1 tsp minced garlic
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- ½ cup unsweetened almond milk
- ¼ cup fat-free half & half (or low-fat milk)
- 2 tbsp grated Parmesan
- 1 tsp cornstarch + 1 tbsp water (optional)
- Salt & pepper
- Optional: red pepper flakes or parsley
Instructions
- Season salmon with garlic powder, paprika, salt, and pepper.
- Heat olive oil + 1 tbsp light butter in a nonstick skillet. Sear salmon 4–5 min per side until golden. Remove and set aside.
- In the same pan, add remaining butter and garlic. Sauté 30 seconds.
- Add mushrooms and cook until soft and lightly browned.
- Stir in spinach and cook until wilted.
- Pour in almond milk and half & half. Simmer gently.
- Add cornstarch slurry if using, then Parmesan. Stir until creamy.
- Return salmon to pan, spoon sauce over top, simmer 1–2 minutes.
- Garnish and serve.
