Ingredients
- 3 baby cucumbers, thinly sliced
- 1 small carrot, diced
- 1 medium tomato, chopped
- ¼ small red onion, thinly sliced
- ½ cup non-fat plain Greek yogurt
- 1 tbsp light mayonnaise (optional)
- 1 tbsp apple cider vinegar or lemon juice
- ½ tsp garlic powder (optional)
- Salt & pepper, to taste
- Fresh dill or parsley (optional)
Instructions
- Wash and prep all vegetables. Slice, dice, and add everything to a large bowl.
- In a small bowl, mix Greek yogurt, light mayo (if using), vinegar or lemon juice, garlic powder, salt, and pepper until smooth.
- Pour dressing over the veggies and gently toss until evenly coated.
- Chill 15–30 minutes if you want the flavors to really settle in.
- Garnish with fresh herbs and serve.
