Penuche Fudge Squares (WW-Friendly Style)

Makes: about 25 small squares

Ingredients

  • 2 cups light brown sugar, packed
  • ½ cup unsalted butter
  • ½ cup milk (whole or evaporated)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Prep the pan: Grease or line an 8×8-inch pan with parchment paper.
  2. Cook the base: In a saucepan, combine brown sugar, butter, and milk. Heat over medium, stirring constantly, until melted and smooth.
  3. Simmer: Bring to a gentle boil, then reduce heat and simmer 3–4 minutes, stirring occasionally.
  4. Cool slightly: Remove from heat, stir in vanilla, and let cool 5 minutes.
  5. Beat: Gradually beat in powdered sugar until smooth and creamy. Fold in nuts if using.
  6. Set: Pour into prepared pan and spread evenly.
  7. Chill: Refrigerate 1–2 hours until firm, then cut into small squares.
