🧀 Ingredients

Cheesecake Filling

  • 2 cups non-fat Greek yogurt
  • 1 small box sugar-free cheesecake or vanilla pudding mix
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Optional: low-cal sweetener, to taste
  • Optional: 1 tsp gelatin + 2 tbsp warm water (firmer set)

Light Crust

  • 1½ cups crushed light graham crackers
  • ¼ cup light butter OR light coconut oil, melted

Cherry Topping

  • 1 can sugar-free cherry pie filling
  • Optional: fresh cherries for garnish

🥣 Instructions

  1. Make the crust
Mix crushed graham crackers with melted butter until it looks like damp sand. Press firmly into a 9-inch pan. Chill while you prep the filling.
  2. Mix the filling
In a bowl, stir yogurt, pudding mix, vanilla, and lemon juice until smooth.
Want it firmer? Stir in the dissolved gelatin.
  3. Assemble
Spread the filling evenly over the crust and smooth the top.
  4. Chill
Cover and refrigerate at least 4 hours (overnight is even better).
  5. Top & serve
Spread cherry filling on top, slice into 12 pieces, and enjoy calmly… or not 😄
