Creamy Yogurt Cheesecake (WW-Friendly)

Ingredients

  • 3 large eggs
  • ¼ cup Splenda (or preferred zero-cal sweetener)
  • 2 tbsp vanilla extract
  • 3 cups fat-free Greek yogurt
  • 1 box instant sugar-free cheesecake pudding mix (dry)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl or stand mixer, blend eggs, Splenda, vanilla, and Greek yogurt until smooth.
  3. Gradually add the dry pudding mix a little at a time, mixing well between additions to avoid lumps.
  4. Grease a 7-inch springform or push pan. Line the bottom with greased parchment if desired.
  5. Pour the mixture into the pan and smooth the top.
  6. Bake for 40 minutes, until lightly golden with small cracks and a slightly jiggly center.
  7. Let cool to room temperature, then cover and chill in the fridge until fully set before slicing.
