Ingredients
- 3 large eggs
- ¼ cup Splenda (or preferred zero-cal sweetener)
- 2 tbsp vanilla extract
- 3 cups fat-free Greek yogurt
- 1 box instant sugar-free cheesecake pudding mix (dry)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl or stand mixer, blend eggs, Splenda, vanilla, and Greek yogurt until smooth.
- Gradually add the dry pudding mix a little at a time, mixing well between additions to avoid lumps.
- Grease a 7-inch springform or push pan. Line the bottom with greased parchment if desired.
- Pour the mixture into the pan and smooth the top.
- Bake for 40 minutes, until lightly golden with small cracks and a slightly jiggly center.
- Let cool to room temperature, then cover and chill in the fridge until fully set before slicing.
