Makes: about 20 bites
WW Points: 2 points per bite ⭐ (using the swaps below)
The vibe
These are the kind of bites you grab “just one” of… and then somehow the container feels lighter. Sweet, nutty, a little chocolatey — perfect for when you want something snacky without turning it into a whole thing.
Ingredients (Lightened Up)
- ½ cup powdered peanut butter, prepared with water (much lower points than regular PB)
- 2 cups old-fashioned oats
- ½ cup mini chocolate chips
- ⅔ cup unsweetened shredded coconut
- 1 tsp vanilla extract
- 1–2 tbsp honey (1 tbsp keeps points lower)
- 2–4 tbsp water or unsweetened almond milk, as needed for texture
Instructions
- In a large bowl, mix oats, coconut, and mini chocolate chips.
- Add vanilla, honey, and prepared powdered peanut butter.
- Mix until everything is evenly combined. A stand mixer or hand mixer works best here — it comes together much faster.
- Chill the mixture in the fridge for 1–2 hours.
- Roll into small 1-inch balls (slightly damp hands help).
- Store in an airtight container in the fridge.
Storage
Keeps well for up to 5 days refrigerated — if they last that long 😉
