No-Bake Peanut Butter Oat Bites (WW-Friendly)

These are the kind of bites you grab “just one” of… and then somehow the container feels lighter. Sweet, nutty, a little chocolatey — perfect for when you want something snacky without turning it into a whole thing.


Ingredients (Lightened Up)

  • ½ cup powdered peanut butter, prepared with water (much lower points than regular PB)
  • 2 cups old-fashioned oats
  • ½ cup mini chocolate chips
  • ⅔ cup unsweetened shredded coconut
  • 1 tsp vanilla extract
  • 1–2 tbsp honey (1 tbsp keeps points lower)
  • 2–4 tbsp water or unsweetened almond milk, as needed for texture

Instructions

  1. In a large bowl, mix oats, coconut, and mini chocolate chips.
  2. Add vanilla, honey, and prepared powdered peanut butter.
  3. Mix until everything is evenly combined. A stand mixer or hand mixer works best here — it comes together much faster.
  4. Chill the mixture in the fridge for 1–2 hours.
  5. Roll into small 1-inch balls (slightly damp hands help).
  6. Store in an airtight container in the fridge.

Storage

Keeps well for up to 5 days refrigerated — if they last that long 😉
