A lighter, creamy cheesecake base with a sweet pecan topping — all the flavor of classic pecan pie but in a WW-friendly form.
⭐ Ingredients
Crust (optional)
- 5 sheets light graham crackers, crushed
- 2 tbsp light butter
- 1–2 tbsp unsweetened applesauce (helps bind & cuts points)
Cheesecake Layer
- 1 block (8 oz) fat-free or 1/3-less-fat cream cheese
- 1/2 cup fat-free Greek yogurt
- 1/4 cup zero-calorie sweetener
- 1 egg
- 1/2 tsp vanilla extract
Pecan Topping
- 1/4 cup chopped pecans
- 2 tbsp sugar-free maple syrup
- 1 tbsp brown sugar substitute
- Pinch salt + cinnamon (optional)
👩🍳 Directions
- Heat oven to 350°F (175°C). Spray a 9″ pie dish.
- Crust: Mix graham crumbs + butter + applesauce. Press into dish. Bake 5–7 min and cool.
- Cheesecake: Mix cream cheese + yogurt. Add sweetener, vanilla, egg. Blend smooth.
- Pour filling over the crust.
- Pecan topping: Mix pecans, syrup, brown sugar substitute, salt/cinnamon. Spoon over the top.
- Bake 30–35 min, until center is just set.
- Cool completely, then chill 4+ hours (overnight best).
- Slice into 8 servings.
