These frozen brownie sandwiches taste like a real dessert but stay light thanks to applesauce, Greek yogurt, cocoa, and a fluffy whipped filling. Soft, fudgy, and perfect straight from the freezer.

Brownie Layer
- ยฝ cup unsweetened applesauce
- ยผ cup nonfat Greek yogurt
- โ cup unsweetened cocoa powder
- ยฝ cup zero-calorie sweetener
- 1 egg
- โ cup whole-wheat or oat flour
- 1 tsp vanilla extract
- Pinch of salt
Ice Cream Filling
- 1ยฝ cups light whipped topping
- Optional: ยฝ scoop vanilla or chocolate protein powder (adds structure)
๐ฅฃ Instructions
- Heat oven to 350ยฐF (175ยฐC). Line an 8ร8 or 9ร9 pan with parchment.
- Mix all brownie ingredients until smooth. Spread evenly in the pan.
- Bake 12โ15 minutes, just until set. Cool completely.
- Lift brownie out and cut in half.
- Mix whipped topping with protein powder if using. Spread over one half.
- Top with the other half to form a sandwich slab.
- Freeze 2โ3 hours until firm.
- Slice into 8 sandwiches.
