This little lemon pudding tastes like something you’d get from a fancy café, but it literally comes together in seconds. I made it on a day when I needed something bright and sweet without the effort — and it turned into one of those recipes you make twice in one week because it’s that easy.


🥣 Ingredients (Lightened)

  • 1 low-calorie protein shake
    (Premier protein lemon, vanilla Fairlife, or any 100–160 kcal shake)
  • 3 tbsp sugar-free cheesecake OR vanilla Jell-O pudding mix
  • 1–2 tsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp sugar-free graham crumbs (optional — still low point, just skip for 0 points)

👩‍🍳 Directions

  1. In a bowl or blender, mix the protein shake, pudding mix, lemon juice, and zest until creamy and thick.
  2. Pour into small cups or ramekins.
  3. Add a light sprinkle of sugar-free graham crumbs on top (optional but very cute).
  4. Chill 2 hours or overnight for that real cheesecake texture.
