This little cheesecake came from one of those moments when the sweet tooth hits but turning on the oven feels like a threat. It’s cold, creamy, and tastes like a full dessert even though the ingredients are super light.
🥣 Ingredients (Lightened)
- 1 block fat-free cream cheese (softened)
- 4 frozen strawberries, thawed → drain excess liquid
- 1/4 cup Swerve (instead of 1/2 cup – still sweet!)
- 1 tsp vanilla extract
- 2 tbsp fat-free Greek yogurt (instead of heavy cream – same creaminess, low point)
(If you really want heavy cream visually: use 1 tbsp light whipping cream — still keeps points low.)
👩🍳 Instructions
- Beat softened cream cheese until smooth.
- Add Swerve, vanilla, and Greek yogurt (or splash of light cream). Mix until creamy.
- Puree the strawberries or mash them with a fork for a textured swirl.
- Fold into the cheesecake mixture or layer on top — both look pretty.
- Chill at least 1 hour before serving for that firm, classic texture.
