Ingredients (WW Adapted)

  • 1 large cucumber, thinly sliced โ€“ 0 pts
  • 2 medium cooked & peeled beets, thinly sliced โ€“ 0 pts
  • 1/4 cup chopped fresh dill โ€“ 0 pts
  • 1/4 cup chopped fresh parsley โ€“ 0 pts
  • 2 tbsp olive oil โ€“ 3 pts
  • 2 tbsp lemon juice โ€“ 0 pts
  • 1 tsp salt โ€“ 0 pts
  • 1/2 tsp black pepper โ€“ 0 pts

Instructions

  1. In a large bowl, combine cucumber, beets, dill, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat.
  4. Refrigerate for at least 30 minutes before serving for best flavor.
