- 2 medium cooked & peeled beets, thinly sliced โ 0 pts
- 1/4 cup chopped fresh dill โ 0 pts
- 1/4 cup chopped fresh parsley โ 0 pts
- 2 tbsp olive oil โ 3 pts
- 2 tbsp lemon juice โ 0 pts
- 1 tsp salt โ 0 pts
- 1/2 tsp black pepper โ 0 pts
Instructions
- In a large bowl, combine cucumber, beets, dill, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Refrigerate for at least 30 minutes before serving for best flavor.
