🥣 Ingredients (Makes 10 bars)
- 1/2 cup unsweetened almond butter – 8 points total
- 1 tsp vanilla extract – 0 points
- 1 tbsp coconut oil or cooking spray – 1–2 points (spray = 0 points)
- 2 tbsp heavy cream – 1 point
- 2 tbsp powdered erythritol (or any keto-friendly sweetener) – 0 points
- 1/4 cup sugar-free chocolate chips – 2 points
- Pinch of salt
(Tip: For even lower points, you can make a thin chocolate layer with unsweetened cocoa powder instead of chocolate chips.)
🔥 Instructions
- Heat coconut oil in a small saucepan over low heat (or spray a pan).
- Whisk in heavy cream, almond butter, vanilla, erythritol, and a pinch of salt until smooth and creamy.
- Line a baking sheet with parchment and spread the mixture into a smooth layer.
- Chill in the fridge for 1 hour until firm.
- Cut into bars.
- Coat each bar with melted sugar-free chocolate chips or a thin cocoa powder glaze.
- Chill for another 30 minutes to set.
