My Easy Chicken & Onion Skillet Dinner

🥣 Ingredients (1 serving)

  • 1 medium onion, sliced – 0 points
  • Cooking spray or 1 tsp olive oil (1 tsp = 1 point; spray = 0)
  • 4 oz grilled chicken breast – 1–2 points
  • 1/2 tsp garlic powder – 0 points
  • 1/2 tsp paprika – 0 points
  • 1/4 tsp black pepper – 0 points
  • 1 can green beans, drained & rinsed – 0 points
  • 1/4 cup reduced-fat shredded cheese – 2–3 points

(Using cooking spray + reduced-fat cheese keeps it lowest.)


🔥 Instructions

  1. Sauté the onions:
    Spray your pan or add 1 tsp olive oil. Cook sliced onions 5–7 minutes until soft and golden.
  2. Cook the chicken:
    Season with garlic powder, paprika, and pepper. Grill or pan-cook until fully done. Slice into strips.
  3. Warm the green beans:
    Heat them in the microwave or toss in the pan (spray-only if you want 0 points).
  4. Assemble:
    Add the chicken to your plate, top with the sautéed onions, add the green beans on the side, and sprinkle cheese on top so it melts.
