My Stay-On-Track Veggie Stir-Fry

🥕 Ingredients

  • 1 tsp olive oil (or olive oil spray) – 1 point
  • 1–2 cups mixed vegetables (bell pepper, zucchini, mushrooms, onions, broccoli) – 0 points
  • 3 mini potatoes, diced – 2 points
  • Salt, pepper, garlic powder
  • Optional: splash of low-sodium soy sauce or a squeeze of lemon – 0 points

🔥 Instructions

  1. Heat the olive oil (or spray) in a nonstick pan.
  2. Add the diced mini potatoes first and cook until they start to soften.
  3. Toss in all the vegetables and season with salt, pepper, and garlic powder.
  4. Stir-fry until everything is tender and lightly golden.
  5. Use half as a warm veggie base for your morning egg, and save the rest as a dinner side.
