🥕 Ingredients
- 1 tsp olive oil (or olive oil spray) – 1 point
- 1–2 cups mixed vegetables (bell pepper, zucchini, mushrooms, onions, broccoli) – 0 points
- 3 mini potatoes, diced – 2 points
- Salt, pepper, garlic powder
- Optional: splash of low-sodium soy sauce or a squeeze of lemon – 0 points
🔥 Instructions
- Heat the olive oil (or spray) in a nonstick pan.
- Add the diced mini potatoes first and cook until they start to soften.
- Toss in all the vegetables and season with salt, pepper, and garlic powder.
- Stir-fry until everything is tender and lightly golden.
- Use half as a warm veggie base for your morning egg, and save the rest as a dinner side.
