WW Pineapple Coconut Fluff

This one takes me straight to vacation mode.
My mom tried it and said, “If this is ‘healthy,’ I’m eating the whole bowl.”
Creamy, tropical, cold, and honestly feels like a real dessert — but still WW + bariatric friendly.


Ingredients

  • 1 container (25–28 oz) fat-free or low-fat cottage cheese
    • Fat-free keeps points lowest
  • 1 packet sugar-free pineapple Jell-O (0 pts)
  • 1 container sugar-free Cool Whip
    • Use fat-free to keep points low
  • 2 tbsp unsweetened shredded coconut (≈2 pts total, still keeps the visual)

👉 I kept the coconut so the look stays the same, but limited it to 2 tbsp to save points.


👩‍🍳 How to Make It (WW Version)

1️⃣ Blend

Blend the cottage cheese until completely smooth and pudding-like.

2️⃣ Mix

Add the sugar-free pineapple Jell-O powder and blend again or whisk until fully mixed.

3️⃣ Fold

Fold in the sugar-free Cool Whip until fluffy and uniform.

4️⃣ Finish

Stir in the shredded coconut.

5️⃣ Chill

Refrigerate until thick, cold, and set.

Serve it chilled — it tastes like pineapple cream pie filling. 🍍

👉 Total: ~3–4 points per serving

You still get the tropical flavor, creamy texture, and the coconut flecks without raising the points.
