Ingredients
Crust:
- 1ยฝ cups crushed graham crackers
- 2 tbsp unsalted butter, melted
- 2 tbsp sugar substitute
Filling:
- 24 oz fat-free cream cheese, softened
- 2/3 cup sugar substitute
- 3 eggs
- 1 tsp vanilla extract
- 1/4 cup fat-free sour cream
- 1/4 cup fat-free Greek yogurt
Cherry Topping:
- 2 cups fresh or frozen cherries, pitted
- 1/4 cup sugar substitute
- 1 tbsp cornstarch
- 1 tbsp water
- 1 tsp lemon juice
Instructions
- Prepare crust: Mix graham crackers, butter, and sugar substitute. Press into 9-inch springform pan. Bake 10 min at 325ยฐF (160ยฐC). Cool.
- Make filling: Beat cream cheese and sugar substitute until smooth. Add eggs one at a time, then stir in vanilla, sour cream, and Greek yogurt.
- Bake cheesecake: Pour filling over cooled crust. Bake 50โ60 min until edges set and center slightly jiggles. Cool completely, then refrigerate 4+ hours.
- Cherry topping: Cook cherries, sugar substitute, lemon juice over medium heat. Mix cornstarch and water, add to cherries, cook until thickened. Cool.
- Assemble: Pour cherry topping over chilled cheesecake. Slice and serve!
