Ingredients

  • 10 oz light mozzarella string cheese (10 sticks)
  • ½ cup all-purpose flour
  • 2 eggs
  • ¼ cup skim milk
  • ¾ cup seasoned bread crumbs (whole wheat or light if possible)
  • ½ tsp cayenne pepper (optional, for a little kick)
  • Olive oil or zero-calorie cooking spray

Instructions

  1. Cut string cheese into bite-sized pieces.
  2. In a bowl, whisk together eggs and milk.
  3. Prepare your dredging setup: one bowl with flour, one with egg mixture, one with bread crumbs.
  4. Coat each cheese piece — first in flour, then in egg, then in bread crumbs.
    (For an extra-crispy shell, you can repeat the egg + breadcrumb step once more.)
  5. Place the coated bites on a plate and freeze for 20–30 minutes — this prevents melting during cooking.
  6. Preheat your air fryer to 380°F (195°C).
  7. Lightly spray the basket with cooking spray and arrange the cheese bites in a single layer.
  8. Air fry for 5–6 minutes, shaking halfway through, until golden and crispy.
  9. Serve immediately with sugar-free marinara sauce or light ranch dip.
