- 2 large tomatoes, sliced into 6 rounds
- ⅓ cup reduced-fat Parmesan cheese (3 WW points total)
- 1 tsp dried oregano
- Salt & black pepper, to taste
- Olive oil spray (0 points)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat oven to 400°F (200°C).
- Place tomato slices on a baking sheet lined with parchment.
- Mix Parmesan, oregano, salt, and pepper in a small bowl. Sprinkle evenly over tomato slices.
- Lightly mist with olive oil spray.
- Bake 5–10 minutes, until cheese melts and is golden.
- Garnish with parsley and enjoy!
