WW-Friendly Oven “Fried” Chicken

Ingredients (4 servings):

  • 4 skinless, boneless chicken breasts, pounded thin – 0 points
  • ½ tsp salt
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ cup whole wheat panko breadcrumbs – 2 points
  • 2 Tbsp flour (can use whole wheat or almond flour) – 1 point
  • 1 large egg, beaten with 2 Tbsp skim milk – 1 point
  • Olive oil spray – 0 points

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment and lightly spray with olive oil spray.
  2. Mix flour, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Dip each chicken breast first into the flour mix, then into the egg mixture, then coat with panko breadcrumbs.
  4. Place chicken onto baking sheet. Spray tops lightly with olive oil spray to help crisp.
  5. Bake 20–25 minutes, flipping halfway, until chicken is golden and cooked through (165°F inside).
