Ingredients:

For the Salad:

  • 4 cups mixed greens (arugula, spinach, baby kale) โ€“ 0 points
  • 1 large cucumber, thinly sliced โ€“ 0 points
  • 1 red bell pepper, diced โ€“ 0 points
  • 1 small red onion, finely chopped โ€“ 0 points
  • 1 cup cherry tomatoes, halved โ€“ 0 points
  • ยฝ cup feta cheese (or goat cheese) โ€“ 6 points total (1.5 per serving)
  • ยฝ cup toasted almonds or walnuts (optional) โ€“ 7 points total (1.75 per serving)
  • ยผ cup dried cranberries or cherries (optional) โ€“ 6 points total (1.5 per serving)

For the Tangy Dressing:

  • 2 Tbsp extra-virgin olive oil โ€“ 4 points total (1 per serving)
  • 2 Tbsp freshly squeezed lemon juice โ€“ 0 points
  • 1 Tbsp apple cider vinegar โ€“ 0 points
  • 1 tsp honey (or maple syrup) โ€“ 1 point total (0.25 per serving)

Instructions:

  1. Prepare the Ingredients:
    • Wash and dry greens; place in a large bowl.
    • Slice cucumber, dice bell pepper, chop onion, halve cherry tomatoes.
    • Add feta, nuts, and dried fruit if using.
  2. Make the Dressing:
